X is not the CEO of the design company, in addition:

On every one of the official company holidays, which occur every other year, exactly 7 non staff members have boarded the ship.

He boarded the boat before the holidays began and thus didn’t have to board it again when the seven employees arrived. Being already on the boat =/= boarding

Not complete enough, you need to be a tinsy little bit more specific before I can respond to that. Roughly how did he come to live on the ship?

If X exists, he does not own the ship.

If this unknown person X does exist then he boarded the boat during the boarding time of one the company’s official company holidays.

What about persons G through W? If Person X truly doesn’t exist, you can just substitute X for G and so forth.

X boarded the ship during one of the official holidays more than 9 years ago, and then never left the boat.

If X boarded the ship during one of the official company holidays then he did so within the last 6 years.

Person X designed the boat. The boat was one of a kind in some sort of way. Because of this he owns it despite it being sold (the best example of this I can think of is the Eiffel Tower).

If the person X exists then they did not design the boat.

Employees A-F were on the cruise in previous cruises. At least part of this group did not come and were replaced for the voyage of the stabbing by other employees!

One of the employees gave birth on the cruise! The attacker jumped off the ship at first, but the baby brought the count back to 7 non-staff members on midnight!

The culprit boarded the boat as a stowaway before it left.
The culprit got off the boat before 24:00, and got back on after.
The culprit took the knife from the kitchen.
The culprit used something other than the spare key or victims key to open the door, like a lockpick to open the door, stab them in the leg, and leave.

But then How did he board the boat, when only 7 non staff members have boarded the boat on each official company holiday, and yet if he boarded it he did so on an official company holiday?

At least one of Employees A-F only boarded the cruise in a previous year! There is an employee other than A,B, C, D, E or F on board at the time of the incident!
